Cheese Scones

Cheese scones are at the top. They were baking while I prepare the pies.

This is how I use up leftover, starting to mold cheese.

First…cut off all that mold

  • 1 egg
  • 1/3 cup oil/butter
  • 1/3 cup plain yogurt
  • 1 cup all-purpose flour
  • 1 TBSPN baking powder
  • 1 cup bread flour (or 2/3 cut bread flour and 1/3 cut oatmeal)
  • 1/4 cut cheese cut into small cubes. To keep from sticking, I put them in a bowl with flour and toss. 
  • 1/4 cup chopped walnuts or other nut

Add egg, oil/butter and yogurt. Mix. Add all-purpose flour and baking powder. Mix. Add the cheese and walnuts and bread flour. Roll into a ball. Turn out into a foil-lined pie pan. Cut into six pieces. Bake at 350 for 30-1 hour. 

On this particular morning, I made rustic pies. The filling was already prepared. After preheating my oven, I prepared the pie dough and then let it sit in the refrigerator as I prepared the scones. After I set the scones in the oven, I rolled out the pie dough and filled them. They finished at approximately the same time. For the rustic pie recipe, visit here
